Ingredients

For the Mint Syrup:

  • 1 cup water
  • 1 cup fresh mint leaves, packed
  • 2/3 cup sugar

For the Mojito:

  • A few fresh mint leaves
  • Ice
  • 2 ounces white rum
  • 1 ounce fresh lime juice
  • 1 ounce mint syrup
  • Club soda (1-2 ounces, to personal taste)

Instructions

  1. Combine the water, sugar and mint, and bring to a boil. Reduce heat to medium and allow to bubble until the sugar is totally dissolved and syrup coats the back of the spoon. Remove from heat, allow to cool and let the mint steep for at least 30 minutes at room temperature. Strain out the mint, and store the mint syrup in a sealed container in the fridge.

  2. In a shaker, muddle the mint, crushing the leaves to release their fresh flavor. Add ice, rum, lime juice and syrup. Shake to combine. Pour into a cocktail glass, and stir in club soda to taste.
