This is for the bacon and pork belly — turnips and carrots.

This is for the rum cake and the baklava — butternut squash and white beans.

And for, well, nothing but only because I really like them — leeks.

It’s true. My normal eating habits have been thrown for a loop because I’m eating out several nights a week. Poor baby. I know. I’m not complaining. Not really. Instead, I’m craving. I’m eating lots of delicious food cooked by other people — no dishes to wash, bonus! — but something in my diet is lacking. I’m craving veg. Lots of fresh, fibrous, nutritious veg.
Most people crave chocolate, and I want turnips. I’m OK with that. The belly wants want the belly wants.
Autumn Harvest Minestrone it is.

This slow-cooker recipe certainly fit the bill. It’s packed to the gills with veg. Really, it packed my large crock pot, mostly because of the coleslaw mix (or shredded cabbage if you want to do it by hand), which is voluminous at first but melts into the soup as it releases its moisture.

Of course, all of the veggies release their moisture, and the light vegetable broth turned out quite good. My belly was satisfied. The recipe as I followed it was a bit bland however, and the recipe here on Local Dish amps up the herbs and spices.

But in my heart of hearts, I know what would make it even better: a ham hock. Yep, I’m back to the pork products.
I suppose the craving has passed.
