
Bouquet of spinach. Ah, honey, you shouldn’t have!
Because I figured we’d have some greens for salad this week, I planned tonight’s dinner to include it and I picked the spinach. Also, I couldn’t wait to eat something from the CSA box because — did I mention? — I’m a little excited.

Spinach Salad with Warm Carmelized-Onion Dressing, which requires hard-boiled eggs and radishes, as well as whatever other veg you’d like to throw in. As one of my favorite bloggers notes: Carmelized onions are bacon for vegetarians or those who don’t eat a great deal of, well, bacon. They’re just as flavorful and pack a huge taste punch, making them the ideal substitute for traditional hot bacon dressing. And a wee bit better for your arteries, too. I promise.

Served alongside: Baked “Fried” Chicken from my Cook’s Illustrated Best Light Recipes cookbook. Not a bad recipe, but I"m making some modifications for next time which I’ll note in the recipe link below.
