
I had a zucchini, leek, corn, garlic and jalapeno, to which I added black beans, a can of organic tomatoes and rice to serve it over. Nice! You really don’t need a recipe with this. Just stuff, cover, and cook for 60-90 minutes at 375 degrees.
Note: Add more tomatoes, lots of tomatoes to overflowing. Or, fill the bottom of the pan with tomatoes! They will soften the peppers and become saucy, making the dish more hearty and satisfying when served over the rice. Ours were a bit dry.
