So remember that massive batch of beets I canned on Labor Day weekend?

That was eight weeks ago now. Eight weeks.

And remember that I said that the husband loves pickled beets? Guess how much he’s eaten in eight weeks. Try.

Five quarts. That’s 20 cups. That’s more than two cups a week. All by himself.
Now that’s a lot of hot pink love that I lovingly made and that he lovingly, thankfully enjoyed. Now that I’m starting to plan my Christmas gift, it’s that kind of homemade love that I know means the most to family and friends.
