The husband craves pizza every Friday night. It’s not delivery — I make it from scratch on wheat pizza dough — but it doesn’t pack a great nutritional punch, either. Therefore, a little fresh salad alongside lightens and freshens the meal, and was a welcome addition in both our opinions.

Some parsley chopped in amongst the leaves, the tart apples and the crunchy almonds make this salad so well rounded undressed — naked salad! — that only a sprinkle of balsamic vinegar replaces traditional dressing.

The pizza was my turkey sausage and mushroom combination, the recipe for which is linked below along with the salad.
What a way to wind down and begin a relaxing weekend, right? Not pictured: our Friday microbrews. A great accompaniment, in our humble opinions.
