Hillbilly Farms is a small-scale animal protein-based operation specializing in poultry and pork products, though they sometimes have other products upon request. Isle Farms is a family operation, serving Colorado Springs and surrounding areas since 2005. The original intention was to provide milk for the family, but after much research on food and nutrition, the farm expanded to a public operation. They were recently bought by the Rose family, which also owns Chad’s Chicken Ranch, which offers chicken products and vegetable shares; see “Chad’s Chicken Ranch” listing for more details. Jersey Girls Farm raises only full Jersey breed cattle, known for the high protein and fat content of their milk. The milk is about 1/4 cream per gallon and is very rich, concentrated milk. The cows are fed only local pasture and eat only grass and hay because recent studies show that milk from 100 percent grass-fed cows has superior nutritional value, with higher omega-3 essential fatty acid, and five times more cancer-fighting CLA. Although it’s not certified, our milk is essentially organic milk with no RGbH, hormones or antibiotics.

Lasater Beef is currently run by the family’s fourth-generation, and raises grass-fed, pastured beef. Starry Sky Ranch provides raw goats milk through a share program.
