Web: http://javernickfamilyfarms.com At Javernick Family Farms, they consider their practices “beyond organic” farming. Son Carl handles the hay production and the cattle maintenance, while Beki has taken control of produce and has recommitted to a diverse farming operation that is organic — although USDA certification as organic is currently too expensive and complex for the farm to negotiate — and enriches the soil with sustainable practices and improving the ecosystem. They grow vegetable starts, host a CSA program and attend several farmers markets (Canon City, Florence, Salida, Westcliffe and Colorado Springs). Produce: Herbs, lettuce, spinach, beets, turnips, cabbage, kale, garlic, squash, corn, eggplant, peppers, tomatoes, melons, onions, cucumbers, cauliflower, broccoli, chard, bok choy, artichokes.
